What Is Specialty Grade
When you hear coffee being referred to as “specialty” it means that it is the prime pick of the world coffee stock. Coffee beans go through a rigorous classification process using strict standards.
To qualify as specialty grade, it must have 0 primary defects and less than 5 secondary defects. The lower the grade, the more defects. By comparison, a majority of what you’ll get from the grocery store is around exchange grade or lower.
